Melting Cocoa Butter
Cocoa butter melts at different stages and at a range of temperatures; complete melting occurs between 32 and 34 degrees celsius.
When melting cocoa butter, it’s ideal to keep it under 60 degrees celsius–at this temperature, it melts quickly but doesn’t overheat. At Jouvay, we melt our cocoa butter in a warm box where the temperature reaches up to 50 degrees.
Melting cocoa butter in the microwave is a perfectly fine option for home cooking. Try melting the butter for 45 seconds - 1 minute at a time (depending on the strength of microwave) and stir between intervals to speed up the process.
